Ingredients:-
- 12 oz Shortcrust pastry
- 2-3 oz cheddar cheese, diced
- 1/2 oz butter
- 2 tablespoons chopped fresh parsley
- 1 tablespoon chopped fresh sage
- Salt and pepper
- 1 onion, chopped
- 2 rashers streaky bacon
- 1 lb belly pork, chopped
- 1 small cooking apple, peeled and chopped
- Pinch of dry mustard
- 1 egg, beaten
Method:-
- Line a greased 9 inch pie plate
- Fry onion and bacon in butter
- Add pork and cook for 15-20 mins
- Leave to cool, then stir in apple, cheese, herbs and seasoning
- Add sufficient egg to bind mixture
- Set oven to Gas Mark 7
- Fill pie with mixture and add pie lid with steam hole
- Brush with egg
- Bake for 15 mins then reduce to Gas Mark 4 and bake for further 25-30 mins
