Ingredients:-
- Suet Pastry made with 6 oz flour
- 1 tablespoon butter
- 1 teaspoon dried sage
- salt and pepper
- 2 medium onions, sliced
- 1/4 teaspoon dried oregano
- 1 tablespoon flour 8 oz minced pork
- 1 tablespoon chopped chives
- 2 egg yolks
- 8oz minced chicken
- 1/4 teaspoon celery salt
- 2 tablespoons double cream
Method:-
- Make the suet pastry, wrap and store in fridge for 10 mins
- Fry onions in butter
- Add meat, herbs, seasoning and flour
- cook for 5 mins
- beat eggs and cream and fold into meat
- cook for 5 mins
- butter 2 and 1/2 pint pudding dish
- roll out dough 1/2 inch thick and put circle in dish
- spoon in meat 1/2 inch thick then add alternate layers but do not fill the basin
- cover and steam for 4 hours
