Ingredients:-
Preparing the Lamb Burgers
- 450 g minced lamb
- 1 garlic clove, crushed
- 1 tbsp fresh mint, chopped
- 50 g black olives, chopped
- 1 tsp tomato puree
- Salt and freshly ground black pepper
- 100 g feta cheese
- 1 tsp fresh thyme
To prepare the salad
- 1 cucumber, peeled and sliced
- 4 tomatoes, diced
- 1 red onion, chopped
- 100 g black stoned olives
- Salt and freshly ground black pepper
- 3 tbsp Greek olive oil
- 1 tbsp Cider vinegar
- 1 tsp Greek honey
Method:-
- Put the lamb, crushed garlic, mint, chopped olives, tomato puree and seasoning in a mixing bowl and bring together. Mix well.
- Divide into four. Mix the feta cheese with the thyme - it doesn't matter if it crumbles, just gently squeeze together.
- Take 1 quarter of the lamb mixture into your hands and roll into a ball. Flatten out, put a quarter of the feta in the middle and then draw the meat up around it. Make sure the cheese is secure within the meat. Repeat with the other three burgers and then place in the fridge for 10 minutes.
- In the meantime, make the salad by mixing the cucumber, tomatoes, red onions and olives together in a bowl. Season with black pepper. Blend the olive oil, vinegar and honey together and pour over the salad.
- Now cook the burgers. Turn once after 5 minutes. Then cook for another 5 minutes on the other side.
