500g turkey breast fillet1 tbsp basil, puréed in oil75 g mustardsalt and pepper300 g spinach150 g Raclette cheese3 tbsp oil125 ml white wine, dry
Method:-
Slice the turkey breast in 20 thin slices. Flatten. Mix the basil paste with mustard, salt and pepper. Brush the mixture on the turkey slices. Wash the spinach. Heat oil in a skillet, add the spinach and cook until the spinach wilts. Allow to cool. Evenly divide the spinach on the turkey fillets, cover with cheese and roll up from the narrow side. Fix with wooden skewers, e.g. toothpicks. Season the outside with salt and pepper.
Sauté the rolls all around over medium heat in the remaining oil. Pour in the wine and simmer for 10-15 minutes. Remove the rolls from the skillet and serve warm or lukewarm on a preheated plate.
