Ingredients:-
- Fish - cod or hake
- Coriander
- Lime
- Red chilli
- Egg to bind
- Green beans,
- Brown sugar (palm sugar)
- Red thai chilli paste - see below
- Fish sauce
- Kafir lime leaves
Method:-
- Chunky fish cubed
- Cut green leaves very finely
- Blend fish, egg, red chillie, brown sugar, lime juice, coriander (with stalks), red chilli paste, fish sauce, lime leaves, only blend for half a minute,
- In a bowl add the mixture, add a little bit of salt and the green beans, roll into disks and add to shallow oil. Fry until brown
- Simple dipping Sauce
- Sugar, vinegar, water, diced onion, red chillies, cucumber, coriander, fish sauce.
Red Chilli Paste (Harissa)
- 5 fresh red chillies
- 1 Canned Plum tomatoes
- 2 Cloves garlic
- 1 ts Ground cumin
- 1 ts Ground coriander
- 1 ts Very hot chili powder
- Vinegar
- Blend all but vinegar - add vinegar at the end.
