Ingredients:-
- 800g fresh plums, de-stoned
- 125g soft light brown sugar
- 1 level teaspoon cumin seeds
- 1 heaped teaspoons coriander seeds
- 6 cardamom pods
- 1 hot chilli, deseeded and chopped very finely
- 1/2 level teaspoon ground turmeric
- 30g fresh root ginger, peeled and grated
- 1/3 level teaspoon ground cloves
- 125ml malt vinegar
- 2 large cloves garlic, peeled and crushed with 1 rounded teaspoon salt in a pestle and mortar
- 1 Spanish onions, peeled and finely chopped
Method:-
- De-stone the plums and chop in a food processor so the skins are too small to notice
- Put all the ingredients in a pan and simmer until you have a sticky syrup.
- Bottle into sterilised jars.
