Ingredients:-

  • 1 and a half onions
  • 1 padron chilli - de-seeded
  • 1 teaspoon dry tamarind - soaked in hot water
  • 2 teaspoons amchoor powder
  • 2 teaspoons (heaped) ginger paste
  • 5 garlic cloves - peeled
  • 2 tablespoons fish sauce
  • 2 tablespoons light soy sauce
  • 1 tablespoon lime juice
  • 8 lime leaves or curry leaves
  • 3 teaspoons turmeric
  • 2 tablespoons light brown sugar (muscavado)
  • 4 tablespoons olive oil

Spices

  • 2 teaspoons of: Cumin (jeera) seeds
  • 2 teaspoons of Coriander seeds
  • 1 teaspoon of fennel seeds
  • 2 teaspoons of black pepper seeds

Method:-

  • Chop onions in a food processor
  • Add the garlic and chop
  • Heat the spices in a small pan until they start to pop, allow to cool and grind together
  • Add the spices and the remaining ingredients into the food processor
