Ingredients:-
- 1 and a half onions
- 1 padron chilli - de-seeded
- 1 teaspoon dry tamarind - soaked in hot water
- 2 teaspoons amchoor powder
- 2 teaspoons (heaped) ginger paste
- 5 garlic cloves - peeled
- 2 tablespoons fish sauce
- 2 tablespoons light soy sauce
- 1 tablespoon lime juice
- 8 lime leaves or curry leaves
- 3 teaspoons turmeric
- 2 tablespoons light brown sugar (muscavado)
- 4 tablespoons olive oil
Spices
- 2 teaspoons of: Cumin (jeera) seeds
- 2 teaspoons of Coriander seeds
- 1 teaspoon of fennel seeds
- 2 teaspoons of black pepper seeds
Method:-
- Chop onions in a food processor
- Add the garlic and chop
- Heat the spices in a small pan until they start to pop, allow to cool and grind together
- Add the spices and the remaining ingredients into the food processor
